Listmates:

SACO Cultured Buttermilk Blend which is a powder (12 ounce can is
equivalent to 3.75 quarts of buttermilk).  Instructions for using it
are on the can.  It is refrigerated after opening.  Ingredients are:
a cultured blend of sweet cream churned buttermilk, sweet dairy whey
and lactic acid.  They have verified that it is gluten free by
telephone, 1-800-373-7226.  At http://www.sacofoods.com the FAQ's
have a list of their gluten-free products.  I love this product as I
don't use a lot of buttermilk at a time and this is a great way to
keep it on hand and know that it is gluten-free.
