I suggest your friend contacts the main UK Coeliac Society
which is open to medically diagnosed people with Coeliac
disease or DH.

Their phone number (within the UK) is 01494 437278 (9:15 am to 3pm
weekdays)

They do have a local group in Lincolnshire in Gainsborough
but that looks as though it is 40 - 50 miles away from Skegness.
