This is my meatloaf recipe...really good. I serve it with twice baked
potatoes (cheese, sour cream and butter , mashed and served in the
shell)
1 lb meatloaf mix ( or, 1/3 lb ground pork, 1/3 lb ground veal, 1/3
pound ground beef) (You can also use all ground beef)
1/2 cup prepared horseradish
1/2 - 3/4 cup gluten free breadcrumbs - note use fresh, not the dried
stuff. If you have gluten free bread you've made, make breadcrumbs from
about three slices) NOT TOASTED!
1 egg, beaten
1 medium onion, diced
1/4 cup water
1/3 cup chopped Italian parsley
Mix all ingredients, shape into a loaf form, put on cookie sheet with
"sides"
Top with the following:
1/2 cup chili sauce (Heinz)
3 Tbls. Heinz ketchup
2 Tbls. Worcestershire
10 drops Hot sauce (optional)
Bake at 350 for 45 mins.
Serve with twice baked poratoes with cheese and sour cream and baby
glazed carrots!
