Many celiacs are unaware that they are lactose intolerant.  The symptoms
are almost sub-cllinical at times.   There is an easy way to determine
if you are.  Carlton Fredericks recommended the technique developed by
Dr Cocoa..  Do not ingest lactose in any way shape or form for at least
7 days....no milk, ice cream, yogurt, various margarines, etc, etc,
etc.   On the appointed day, on an empty stomach, take and record your
pulse.  Then ingest some milk.  thirty, sixty, ninety min afterwards,
take and record pulse.  Any increase above ten percent indiates an
allergic response.  The higher the pulse, the greater the reaction.
You can try this method with other food forms. Some may be able to
tolerate yogurt, for example, while others may not.

Leady gut is also indicated in arthritis.  Interestingly, many Italians
[we've recetnly read about the rate of celiac in Italy], have a high
incidence of arthritis.
