Hi,

I have been looking for a way to make German stollen this Christmas without
any gluten, dairy or soy. Does anyone have a good recipe? I'm thinking of
adapting my grandmother's stollen recipe (it's a classic for our family),
but am not sure what combination of flours to use. I've noticed that the
only gluten-free stollen recipes I've seen call for powdered milk and/or soy
flour, which I cannot have. I'm wondering if I'd need to add almond meal or
bean flour or another source of protein to the gluten-free flour mix.
