It is NOT alot of work to make



Just throw bag of cranberries in a pot with a cup of sugar or half cup

honey, perhaps some cinnamon and cook slowly over low heat until

cranberrries POP



or....just place cranberries in processor with some sugar/honey, nuts,

orange juice and whirr.  That's it.





I know you are looking for a premade cran. sauce but this family recipe (my

great grandmother's) is quick and easy.  Can be made well a head of time.



1 lb cranberries, measure the berries by the cup.  Use half as much sugar as

berries and half as much water as sugar. (ie. 1 cup berries + 1/2 cup sugar

+ 1/4 cup water)  Put berries, sugar and water in a sauce pan.  Cover until

berries begin to boil, then remove cover.  Gently push berries under liquid

til all are done (approx. 10 mins.)  Do not cook til berries lose shape or

turn dark.  While the fruit is hot, add 1 envelop of gelatin soaked in 2

tbls of cold water.   Pour into a pretty glass dish and cool.  Can be poured

into a mold.  I pour it into small glass bowls so that there are several

bowls on the table.  One in reach at all times.  Has a nice tangy flavor.



It is so easy to make from scratch.



I just follow the pkg direction s-- add sugar (or honey) to water, or a

portion of orange juice and water, and then simmer it and add the

cranberries for another 5 minutes or so.  I make it year round.  I also am

allergic to corn, and this is easy.





I'm thinking that you must use a much more complicated recipe than I do.



2 c. fresh cranberries (rinsed, look for stems and remove)

1 c. water

1 c. sugar



Boil all of that on a light boil until all the berries are popped.

If you keep it on low boil, you don't even have to watch it all that

much.  Just boil until it's the thickness that you like, and chill.

Your daughter, if a bit young, might enjoy "helping" the berries to

pop!



So far, I got this recipe from someone, which can help nail down =

quantities, plus some comments.=20



2 C. cranberries, chopped or 1 package

2 C. oranges, wedges cut up or chopped

2 C. apples, chopped

1/2 C. sugar





Now this one sounds very elegant -

CRANBERRY ORANGE MOUSSE



1 bag cranberries (12 oz)

3/4 cup sugar

1 tsp. grated orange zest

1/4 cup orange juice

2 Tbsp. Grand Marnier

1 cup heavy whipping cream



Rinse and pick over cranberries and place in a large saucepan.  Add sugar
and

cook over medium heat about 5 minutes, until cranberries have burst and the

mixture has a thick jam-like consistency.  Cool.



Rub through a strainer to remove skins.  Stir in zest, orange juice and

liqueur and mix thoroughly.  Whip cream and fold into cranberry puree.
Place

mousse in bowl or wine glasses or place in a serving bowl.  Decorate with
whipped

cream before serving if desired.
