Monical's Pizza, which has about 50 restaurants in Illinois, Indiana and
Wisconsin, is doing a trial of gluten free pizza. It arrives uncooked and
in an aluminum pan. It is cooked in the same pan it is packaged in. Our
Monicals in Tolono, Illinois is the first to try it. We have tried it and
not only is it not disgusting, it is not bad, and best of all it is really
good. As far as I'm concerned, that puts it in a category by itself. My
daughter who also has Down Syndrome has the Celiac in the family, but I'm
the chief dietician and cook. I was really impressed with the crust.

Anyone who goes to a Monicals should mention to the manager that he should
order the new crust and spread the word. We actually heard about this menu
addition on a very detailed radio commercial.
