I apologize to the list, folks. Based on most of the responses I received, I
concluded that I didn't express myself clearly enough because people
misunderstood what I was trying to ask.

My question was NOT: "How long does a Celiac (or non-Celiac gluten/wheat
sensitive person) have to avoid gluten before they can go back to eating
normally?" I realize that a Celiac MUST AVOID GLUTEN FOREVER.

My question WAS: "If I am trying to find out if gluten is causing my
symptoms, how long would it generally take once eliminating gluten from my
diet before I start to feel better?"

Phrased another way: "If your medical tests showed no evidence of Celiac
disease, but you just wanted to be sure and try a gluten-free diet, how long
would you do it for before concluding that gluten is not a problem (if your
symptoms don't improve that is)?"

Mind you, gluten-free is simply a straw I (and my friend who is going through
a similar experience) am grabbing at. I have no real reason to believe that I
have a problem with gluten. I've never had an obvious reaction to gluten.
It's just a wild guess - taking a chance that eliminating gluten might help
me.

I hope that makes sense. I hate to waste peoples time having them answer a
question I never asked..
