APPLE SAUCE CAKE

Cream:
        1/2 cup shortening
        1 cup sugar

Add & beat well:
        3 eggs

Add 1 cup unsweetened applesauce
        1 1/2 cup rice flour
        1 Tablespoon flax seed meal (optional)
        1/2 cup corn starch
        1 teaspoon xanthan gum or guar gum
        1/4 teaspoon salt
        1 teaspoon baking powder
        1/2 teaspoon soda
        1 teaspoon cinnamon
        1/2 teaspoon ground cloves (optional)

Beat till smooth.

Fold in:
1 cup raisins (optional)

Bake in greased 8 inch pan at 350 for 45 - 50 minutes.
