Kraft makes shredded cheese and will clearly state if there is gluten on the
label. I use Kraft for my mozzarella, and for parmesan I buy a chunk and
grate it myself, so I know that it definitely does not contain gluten! Some
companies add flour to grated or sliced cheese to stop them from sticking
together, but you can't go wrong with fresh cheese!
These are the listmates' responses I got:

Parmiaggano Regiano (sp?) is gf - it's from Italy - only buy the good stuff.

The Kraft company has pledged to list not only the eight allergens on their
labels, but also the other gluten ingredients (barley, rye). My 16 y.o. son
is celiac and very sensitive to gluten. He's used Kraft parmesan and
mozzarella cheese with no problem. Just look at their labels. They will list
if something is derived from the no-no's; i.e. "modified wheat starch" vs.
"modified food starch" IF there were wheat in it.

Cabot brand mozzarella as well as Great Value brand from Walmart are GF.

I called two weeks ago and was told by Sargento that their Grated Parmesan
Cheese is gluten free!
