Hi All--
   
  If you've been on this list for very long, you'll recall that I'm the crazy chick that can't seem to get a loaf of GF bread to work out. I'm always asking for new recipes...What ya'll probably didn't know (cause I didn't say), was that every bread I've tried making causes moderately severe constipation. Since I'm one of those celiacs who doesn't know the meaning of the word diarrhea, this is a problem. I know for a fact that I have a sensitivity to yeast, bean (legume) flours, sorghum flour, and amaranth.
   
  I made a new bread on Sunday using only rice flours (Bette Hagman's Featherlight Bread) - no yeast. I ate one slice and could tell by evening that I'd wasted yet more flour, eggs, butter, etc. and spent more $$ on the electricity to bake in search of the holy loaf that would save my boring lunches! Grrrrrrrr.....
   
  Yesterday, I analyzed everything - I frequently bake and eat biscuits without a problem, so what's with the bread thing? The one thing that has been common in my bread, but not the biscuits is guar gum. (I've never used xanthan and don't need the guar in biscuits - the eggs work just fine) So......I Googled "guar gum" and found an article noting that guar is derived from a specific legume. I feel a bit stupid....I should know, just from being celiac, to always find out what each ingredient is and where it comes from. Duh.
   
  I don't know for certain that using xanthan in place of guar will solve my problem, but I'm guessing that it will go a long way in helping me find a bread my gut can tolerate. For any of you who have issues with legumes, you'll probably want to stay away from things containing guar. Just one more thing to check labels for...and guar is in many foods! I can't tolerate the amount of sugar in Boost, so I ordered Boost Diabetic from Walgreens a few weeks ago. Though I tolerated the Boost Diabetic somewhat better than the regular Boost, I still had some issues. I noticed last night that "partially hydrolyzed guar" was listed on the ingredient label.
