Here is the info I gathered,

Moosejaw Pizza has gluten-free pizza
Uno Chicago Grill has a gluten-free menu
Pizza Pub has gluten-free pizza (my daughter ate here, she said the pizza was 
really good)
Cheese Factory Restaurant has a vegan/gluten free menu (yes, the gluten free 
items are all vegan as well.  Not very kid friendly, unless your kid loves 
tofu).
Monk's Bar and Grill - spoke with a manager who was very helpful and 
accommodating.  She was able to go over their menu with me and let me know which 
items were safe, or how to order them to be safe (cook separately, leave off 
sauce, bun, etc.) 

I also received allergen information from Famous Dave's BBQ which was helpful.
... and there's always McDonald's and Culver's! 

She stayed at The Wilderness, so I contacted the management there who responded 
that they do not have any gluten free items on any of their menus, but she was 
welcome to bring her own food into their water parks and restaurants.
