I'd like to back this up; I just had a bad experience with a "GF" meal on
Air Canada.  AC has been commended for their care in providing GF meals, and
the meal leaving Toronto was excellent.  But on the return flight, leaving San
Francisco (SFO), it included wheat crackers and suspicious salad dressing.

I mentioned this to a non-celiac who's a frequent traveller, and he said that
nearly all the meals originating at Canadian airports are catered by Cara. (By
the way, Cara also owns Swiss Chalet. Canadian celiacs will know that SC's
chicken and dipping sauce are GF. :) )

For flights originating in the US, it depends on who's catering at the airport
in question.  From the looks of it (my experiences and the archives), SFO is
catered by badly trained monkeys. ;) Maybe some airlines do their own meals,
but I don't know which ones.

If anyone has any leads, I'd be happy to research this more.  It seems like a
case of the right hand not knowing what the left hand is doing.

Anyway... if you're posting about a good or bad experience with a GF meal,
please specify *which airport* you were flying out of, as well as which
airline!
