The term "gluten" as used in the celiac world refers to the toxic-to-celiac
fractions of plant protein.  Many people have food allergies to corn, but there
has never been any evidence mentioned on this List that Celiacs have a toxic
reaction to corn.  It would have been helpful if you had included the name,
author, and the direct quote from the cookbook.
