Ken, I've read that most adult Celiacs can tolerate up to 10
milligrams of wheat gluten a day, but most of us just don't take
chances.  And children can be much more sensitive.

An example:  I love apple sauce, and make large quantities of it
in the fall.  This last fall I broke out with DH, and
generally felt listless.  Then I read on this newsgroup that some
brands of cinnamon use wheat flour to make them flow more
smoothly.  I switched to a pure brand, and my problems went away.
Now I wasn't using very much cinnamon, so the amount of wheat
I ingested couldn't have been more than a few crumbs worth.

My wife doesn't use butter, but loves bagels and crackers.  She
makes every effort to avoid cross-contamination, for my sake.
