Not sure everyone has heard but Robin Hood Flour here in Canada is now distributing Gluten Free Flour.  I found mine at SaveOn.

My wife made the chocolate chip cookie off the back of the container and one would not know it was from gluten free flour.  Light and fluffly and it did not shrink in size after baking.

Give it a try.
