     I forgot to mention the source for the dough enhancer, so here it
is: I use Kitchen Specialties Dough Enhancer ( GF ) that can be found
at the following site:

     http://www.everythingkitchens.com/bakingsupplies.html

Though I have not personally tried it, I'm sure you could also use
the dough enhancer sold through the Gluten Free Pantry at:

     http://www.glutenfreepantry.com

     Just go to the site, click on "Order Online", click on "Search",
     type in 'dough enhancer', hit enter and voila!
