I also have had similar sounding symptoms.  I seem to have
noticed this phenomenon mostly when I was NOT following a
strict GF diet.  I also was very suspect of diabetes or
possibly glucose intolerance or something else related.
I had all the tests--diabetes, glucose tolerance,
insulin tolerance (I think), etc. and they were all normal.
