This one is yummy!

Need: a heavy, teflon coated 5 qt saucepan. [can use any heavy pan but
the non-stick coating really makes it easier to cook and clean up]
candy thermometer

Line two jelly roll [sheet pans] with alum. foil and lightely brush with
butter.

Ingredients
3 cups sugar
1 cup dark Karo syrup
1/2 cup water
1/2 stick unsalted butter
1 teas salt
1 12 oz pkg sesame seeds [I get mine at Whole Foods]
2 teas vanilla extract
2 teas baking soda

Bring sugar, water, syrup and salt to a boil, stirring occasionally
until sugar melts. Insert thermometer, being careful not to let it
touch bottom of pan. Heat should be mediium. When temp reaches 200, add
sesame seeds and stir. The higher the temp goes, the more you stir
[don't leave stove, it can burn quickly] It will take approximately 15
min to get to this stage.

When temp reaches 300, shut off heat and add butter, baking soda and
vanilla. Stir well. Candy will foam. Make sure butter is melted and
texture is uniform.

Pour into prepared pans and let cool. When at room temp, break into
pieces and store in air-tight container.

Hints--
-do not attempt to make this on a damp day
-always have a bowl of ice water nearby. Hot sugar mixtures can give
you a bad burn, so make sure children are not around stove.
-I use a heat resistant spatula to stir.

Clean up....
fill pot with hot water and let sit. If you used a teflon coated pan,
cleanup will be a breeze.

Enjoy!!
