Summary:

A while back I inquired about how folks viewed storing the Whole Foods Bakehouse baked goods, since they are shipped and stored frozen and are mostly put out for sale on cooled shelves where they partially thaw.

Most folks said they are able to store the thawed products in their fridge for 2 to 2 1/2 weeks with no problem.  However, the overwhelming majority said they'd prefer that the store left them frozen and presented them in freezer displays like our breads used to be.  This is because most people don't just drop by Whole Foods for a loaf of  bread when they need one.  Rather, they stock up when they go.  This is true for folks who live near a store, but it is particularly true for folks who live a distance away and really stock up when they go shopping.  

Most of these folks call ahead to the store to tell them what they'll want and ensure that it's available in the freezer.  They'll bring big coolers and definitely want the products left frozen.   Even close-by folks have to refreeze any partially thawed products and would just as soon they were left frozen in the first place.  Some folks said that their stores have caught on to this and have eliminated the cooling shelves entirely and leave stuff frozen.
