I received response to my query regarding the inability to digest g-f carbs
and damaged mucosa from 15 celiacs who share the problem. Here are there
suggestions:
Avoid the carbs, go on the Specific Carbohydrate Diet.
Take hydrochloric acid, digestive enzymes, l-glutamine (500mg capsule),
probiotics. The book "Why Stomach Acid is Good for You" is a good rundown of the
digestive issues
Eliminate canola oil (is g-f but lectins could be inflammatory)
Test for D-xylose, multiple stool fat tests (steatorrhea) and blood enzyme
levels (lipase, amylase, trypsin). Pancreatic insuffficiency.
Other IgA allergies (casein).
Take metamucil.
