Thank you to everyone who responded. I actually had more emails from
people who wanted me to summarize so I don't have a whole lot of info
to share but I hope that others will find it helpful. I hope you all
have wonderful gf trips to Alaska! This will be my first experience
traveling since being diagnosed with celiac disease a month ago so I'm
hoping it goes smoothly. I'll send an email once I return in July.

Cheers,
Samantha in Boston

One person wrote me with the names of people to contact in Anchorage
and Fairbanks so if anyone would like me to forward that information to
them please email me directly.

Hi - I live in Anchorage, and recommend La Mex restaurant at 6th and I
street. I always order the tostaditoes or fiesta nachos. There is a
health food store in the University Center called Natural Pantry. The
best grocery stores for GF items are Fred Meyer and New Sagaya (the NS
at 13th and I - there is another one with fewer items). Both FM and NS
carry Pamela's cookies. FM sometimes carries Ener-g Tapioca bread, but
of course you would need access to a toaster.
