To the person who asked about these:

I've been on both the Polynesia and the Legacy since diagnosis.  I had no
problems, just tell the company when you make your reservation AND most
importantly meet and talk with the Chef at the start of your cruise.  Let
them know what you can/can't have.  They make some awesome meals and a few
times were able to rework a recipe for me versus giving an alternate dish.

I did bring my own cereal, bread, crackers, etc.  It takes some diligence
since you're on a ship with many others, but passengers usually don't number
more than 50-150 depending on the cruise so it's not impossible.
