Many people wrote to tell me that the ingredients can be deciphered thusly:

farina di grano saraceno?
Buckwheat flour.

and farina di girasole?
Sunflower flour. 

and farina di semi di lino? 
flax flour.

The brand of pasta I bought in the Italian farmacia is called Giusto, comes in a green box, and is fabulous.  The box has no website listed, but it appears to be a new line, and we will possibly be hearing more about it sometime in the future.
