MY QUESTION:  I bought some food today that states that it is gluten-
free.  Under the ingredients it says modified wheat starch with an *
next to it.  The * note says "The gluten free wheat starch used in this
product complies with Codex Alimentarius".  I have never heard of this.
I was just wondering if anyone else has heard of this and if they think
it is "safe".

Codex Alimentarius Commission is a UN body charged with the development of
international standards for food safety and consumer protection.

The Codex Alimentarius is a standard used in Europe and wheat starch
meeting this standard is widely used by Celiacs over there and I think it
is government approved in Ireland and maybe England to be distributed
through their pharmacies for Celiacs.

CSA and most other Celiac groups take a dim view of it.

I and my Celiac daughter both use Odlums Tritamyl Flour from Ireland,
bought through the Gluten Free Mall.  It contains the wheat starch you
refer to along with other gf ingredients.  It makes wonderful pancakes,
bread, cakes, banana bread, almost anything.

Neither my daughter or I have any reaction to this product and we are
both sensitive Celiacs.  I think every individual has to make up their
own mind on issues like this.

I wouldn't touch it with a barge pole! It still has small amounts of gluten
in it. If you continue to eat it, it will build up in your system, and
although you will not have an immediate reaction, in time you will begin to
feel sick.
