5.MODIFIED PALEO DIET & SUGGESTIONS:
Hello Cripps.  I too was having all of the problems you describe.  I put myself on a modified Paelo and feel wonderful.  It is hard, but worth feeling well for the first time in years.  I do have Celiac so am Gluten Free.   Here is what I eat:
Beverages - Green /Black Teas, Red Wine (No Coffee)
Meats - Lean Beef, Chicken, Fish and Pork
Eggs
Fruits - Especially, Fresh Apples, Berries, Cherries, Peaches, Pears
Nuts - Almonds, Macadamia, Walnuts (No cashews or peanuts)
Oils - Extra Virgin Olive Oil, Flaxseed Oil, Walnut Oil
Vegetables - Especially: Asparagus, Beets, Bok Choy, Broccoli, Cabbage, Carrots, Cauliflower, Celery, Chives, Jerusalem Artichoke, Red/Yellow Onions, Tomatoes, Salad Greens, (No Potatoes)
Seasonings - Dill, Garlic, Ginger, Oregano, Sage, Thyme, Turmeric
Supplements - Multiple Vitimin, B6, B12, Folic, and Zinc
Cook by Steaming, boiling, broiling, stir-frying and roasting.
No Milk, Soy, Corn.  (Remove Eggs if problems persist)

6.EAT RIGHT FOR YOUR BLOOD TYPE-BOOK: (P.S. I have tried this and didn't have much luck. But My mom swears by it for her food allergies.)
have you read the book "Eat Right For Your Type"  by Dr. Peter D'Admamo?
ie eat right for your blood type.  It makes a lot of sense to me, and there
is a lot
of independent research to show that ceratain bllod types have difficulty
with certain
foods together with the idea that ceratin blood types have certain diseases.

7.THE BODY ECOLOGY DIET-Book:
My children suffer from "a million" food allergies and are finding relief in
doing The Body Ecology Diet by Donna Gates, which is no sugar and
low-glycemic....and in our case turns into a high protein, lowish carb diet
for them.  The reason it is helping them is that it is killing off the
systemic yeast that is creating the ever-spiraling list of new and more food
allergies on top of the gluten issues.  You might want to consider getting
tested for gut yeast/parasites and see if that might answer the reason for
your sensitivities.

8.HYPOTHYROID:
You are not hypothyroid, are you?  The puffiness can be a symptom of that.
Many people who are gluten intolerant are also hypothyroid.  I am one of
them.

9.VARIOUS HELPFUL LINKS:
sugar intolerance is the result of damage to the microvilli of the  
intestine, where the enzymes are located.  lactose (milk) is the most  
sensitive to this "celiac style" damage, followed by fructose (fruit,  
corn sweeteners) and then sucrose (table sugar).

I am not familiar with carbohydrate intolerance, but I can tell you  
that I do not tolerate wheat, rye, oats, barley, corn, rice, soy, milk,  
or eggs, but I find black-eyed peas and cabbages (cabbage, brussels  
sprouts, kale, collards, kohlrahbi, broccoli, cauliflower) perfectly  
digestible.

10.ALLERGY TESTING & CANDIDA: (P.S. I had problems with Candida but seem to have overcome it with the use of Afidolius for a few months.)

1.  Do any of you have yeast infections?  These can create lots of problems.
Not uncommon for people with leaky guts - thank you CD.  This usually
requires western medicine to clear up. And staying off all fruits and
sugars, including breads and fermented foods, until the yeast is gone.  May
take several months.  I'm currently getting my yeast infection cleared
up....and do I feel better.  My diet now is protein (meat, fish), veggies,
and rice (or rice products).  This item and the next had about sunk
me....and having solved/addressed both my life is 1000% better.

For food allergies, consider having yourself tested via York Nutritional
Laboratories (www.yorkallergyusa.com or 888-751-3388).  They can test up to
120 foods and give you a list of what you have delayed allergies to.  I was
surprised by the 6 foods that showed up on my list!  Don't know if it works
for kids.  They send you a 'kit' for at-home use and you send them back the
sample for testing.  It made a HUGE difference to me.

3.  Do acidophillus and l-glutamine help?  Some folks have found this combo
helps heal the gut and lets them go back to a broader food choice.  I'm
about to add this into my diet and see how it goes.

4.  Try the book by Dr. Braly on Dangerous Grains.  It's very useful and he
talks about a number of these things.

11.SUGAR BUSTER"S DIET & SOUTH BEACH DIET BOOKS:
Try reading the "Sugar Buster's Diet" or the "South Beach Diet"...even
though you're not trying to lose weight, the information about the
various fruits and veggies and the sugars they contain would be
invaluable.  Good luck and feel better!!

Thankyou all very much for the info.  I'm now going to research this and will update later.  For those of you with the same problems keep me posted if you discover something that helps and I will do the same.  I think I'm going to look into the Enzymes for sure, I'm so sick of different diets!!!! Aren't we all!
