For those that aren't familiar with oat matzah this has been produced
under the direct supervision & involvement of Rabbi E. Kestenbaum of
London. This project started prior to 1990 which was the first year I
used this matzah. Rabbi Kestenbaum started this because he has a
daughter with celiac. Currently the oats are raised in Scotland on
dedicated fields, the combine is actually driven by Rabbi Kestenbaum,
the oats are ground in Israel, with the matzah being made in Lakewood
and Israel. The oats are tested for gluten/gliadin and since they do
have a high fiber content you should be careful that the additional
roughage doesn't cause problems (my personal caveat!!).

I personally only use the matzah for the meals on Yom Tov and Shabbos
during Passover AND I eat the minimum required--this is partly due to
the high fiber content plus I don't know how much oats I can tolerate.
During the rest of the week I use the mock matzah which I posted under
another email. I do use the oat matzah meal to make rolls during the
year for challah on shabbos. If anyone is interested I will post this
separately. I find that 2 pounds gives me more than enough to have the
minimum required for the year. Again I only eat the minimum. I have had
feedback that people have had problems with the matzah but don't know if
it is the high roughage or the oat protein.

If you buy the matzah for use during the year I find it freezes well and
this prevents it from going rancid. Just put it in a freezer bag or
double bag it before putting it in the freezer.
