Hello,

There are a few things I don't understand.   Why are Celiacs at a higher risk
of intestinal lymphomas?  Is it related to malabsorbtion or does the gluten
actually cause this cancer?

Also, would gluten ingestion cause one to become emotionally edgy.  For
instance, it seems that I fly off the handle much easier if I cheat a little.
 I don't want to sound crazy but I think it effects me that way.

My physical symptoms seemed to have subsided somewhat ( I was diagnosed in
the fall of 1998)  so I tend to cheat more often lately.  Not a lot, but
every now and then.  I would never eat pasta but once in a while I will have
a small slice of Italian bread or a slice of pie.  I do not concern myself
with things such as white vinegar or vanilla extract.  I also tolerate spelt
and have that in moderation.

I have blood work about every six months and it always comes back fine.
My thinking is if I am absorbing, all is well.

Any insight you can provide on my questions will be truly appreciated.  I am
still confused after almost 3 years on this diet.
