Same GF restaurants as those on the mainland.  Sweet Maries' Bakery (100%
GF) on Kona is great.

We visited the island of Kauai and found the most delicious gf bakery in Kapaa.  It's on right side of the major road going north up from Lihue.
Don't blink or you'll miss it.  She has a web site:  sweetmaireskauai.com
It's a hole in the wall but very worth it.  There is also a natural food
store in the shopping area across the street where you can find "commercial"
gf products.  Ask a local for exact location as that was hidden too.  Be
aware that gf is especially expensive in Hawaii.  As for eating out, which I
did little of, I was able to communicate my needs to the chef.  In fact,
somewhere on Kauai we stopped at a mall where there was a Hispanic
restaurant and not feeling comfortable with the place, I brought out my
standard gf bar, apple and yogurt.  The "owner" of the place said I could
not eat my brought-in meal while in rest of the family ordered theirs!!!
God bless my fam, for all 5 of them promptly got up and left!!  Lost revenue
for them!

In Honolulu on King Street near the intersection of University St, you
will find a health food store called Down to Earth.  They have a
selection of packaged GF foods, organic veg and fruit, and a small
take-out hot buffet where the staff can identify ingredients and
gluten-free options.  Staff seems celiac-literate.

So much Hawaiian food is gf already; I'd say pack some soy
sauce (if you like it), and you'll probably be fine.  DEFINITELY try the
Lappert's ice cream -- best I've ever eaten
I do not remember the name of the store-- but in Kona on the big Island of
Hawaii, the shopping center that contains the Wal-mart also has a health
food store that I found to be VERY well stocked with GF items. It is on the
other end of the shopping center.

There is a fantastic Health Food store just out of the Kahalui airport on Maui called Down to Earth.  It is a big green building on the right side of Dairy Road.  I shop for all my GF items there and then head to where I stay which is Napili next to Kapalua.  I do not take any GF food anymore.  I have no problems eating on Maui as so many of the restaurants serve grilled fish and rice and vegetables.  There are 2 Outback’s too which might not seem to be a great thing to you however I live where there are NO Outback’s so I like going there for my yearly Outback binge.

 

In Lahina I have eaten at Bubba Gumps – the peeled shrimp – just have them steam them instead of boil them in beer.
