You can add the following to the basic flourless Peanut Butter Cookie recipe
1/2 cup mini choco chips
1/2 cup chopped candied ginger
1/2 cup crushed cany canes
1/2 cup nuts

You can also make an outrageous sandwich cookie by spreading some chocolate icing between 2 cookies

When I make these for my church's coffee hour, I use a 40oz jar of Pathmark Crunch Peanut butter and mulitiply all ingredients by 5.

If you do bake cookies alot, I urge you to get a silpat liner.  NY Cake and Decorating Store on 6th Ave and 22 St in Manhattan carries them.  I also use them when I make peanut brittle...doesn't stick
