Thanks to all who sent recipes & advice on fluffy cake.  Here are the two
chocolate cake recipes I was sent.

LEILA’S BEST CHOCOLATE CAKE EVER
** 2 c gf flour mix
** 1 tsp baking powder
** 2 eggs
** 2 c sugar
** 1/2 c cocoa
** ˝ tsp salt
** 2 tsp baking soda
** 1 1/2 tsp xanthan gum
** 1 c hot water
** 1 c vegetable oil
** 1 c buttermilk
****  In a large bowl, combine dry ingredients. Stir in oil, buttermilk &
eggs (I used my mixer). Add hot water & stir til combined. Pour into a
greased 13x9 pan (I made cupcakes). Bake cake at 350 35-38 min, or cupcakes
for 20 min. Frost as desired.


PETITE CHOCOLATE CAKE
** 1/2 c. cornstarch
** 1/3 c. potato starch
** 1/2 c. cocoa
** 1 tsp. Baking Powder
** 1/2 tsp. salt
** 1 tsp. guar gum
** 2/3 c. sugar
** 1 egg
** 3 Tablsp. Oil
** 1 tsp. vanilla
** 1/2 tsp. baking soda
** 3/4 c. milk
****  Preheat oven to 350. Combine all ingredients except milk. Slowly add
milk while stirring, and ensure that  all lumps are removed. Pour batter
into greased 8" round pan. Bake 25-30 min. until pick inserted in center
comes out clean. Serves 9.
