Dear Listmates,

Blue-veined cheese is traditionally made in Europe by tossing a loaf of
extremely moldy bread into the curds - at least according to a cheese book
we checked out of the library.

But Dr. Peter Green, in the recent book, said to check manufacturers in the
US because many use "chemical starter." It would be good to ask Trader Joes
the question, but I haven't yet. I did ask the Treasure Cave Blue Cheese
people. You can get Treasure Cave at many supermarkets. Text is as follows:

I'm wondering if Treasure Cave is made with a "chemical starter" or a
bread-based starter. I'm looking for a bleu or gorgonzola cheese that is
free from a bread-based (gluten) starter.
