Gary, where did you get the information that Kikoman Mirin is 0.1% gluten?  I
would be most interested in getting that source of information.
 
Although you are very sensitive to gluten, many celiacs are not, and we
listowners urge people not to try to judge the damage (or lack of damage) from
their own personal symptoms.

The food chemist that you spoke to had probably never read the literature cited
by Kasarda on our List.  As you may recall, he discussed a study which showed
that a sample of celiacs consuming 100 milligrams of gluten per day did have
noticeable changes in their intestines.
 
One kilogram (2.2 pounds) of a food which contains 0.01% gluten would have 100
milligrams of gluten. My calculation is 1000 grams times 0.01% times 1000
milligrams per gram = 100 mg.  Please correct me if this is incorrect.
 
A quart of a liquid about as dense as water will weight roughtly one kilogram.
And over the course of a day, the average person probably eats several
kilograms of solid food.
