I just watched Barefoot Contessa on food network and saw her make an absolutely sinful meringue dessert called ile flottante or floating island. Since it's gluten-free, I figured I'd call it to your attention. The link is above. If the link doesn't open, google Barefoot Contessa and when the site comes up, search for ile flottante.

Unfortunately, I just started myself on a sort of South Beach diet to lose weight and bring my bloodsugar levels down, so I won't be making this anytime soon. She was making it as an option for a wedding rehearsal dessert. But if you need an easy dessert that looks complicated....you might try this one.
