Because we have subscribers with conditions other than celiac, there may be
some who can be of assistance.  A discussion that I had with Marilyn on the
use of alternate binding techinques (besides the use of xanthan gum) may
prove beneficial to everyone.

Hello, celiac folks! I do not (probably) have celiac disease, but am
allergic to/intolerant of wheat, corn, dairy products, beef, nightshade
plants (tomatoes, potatoes, peppers), and a few other things, so I know
what a restricted diet is all about!
 
I use more grains than celiacs, however, including amaranth, millet, quinoa,
light buckwheat, brown rice, plus moderate, occasional amounts of rye, oats,
and Kamut. (Kamut is a variety of wheat, like spelt, but Kamut works much
better than spelt for me).
 
I feel best if I rotate these grains in my diet, so I need to use most of
them. (I get sick if I eat rice every day, for example.) I have developed
recipes for using all these grains in yeast breads, and am now planning to
convert them for use in bread machines.
 
I was wondering if anyone on the List has tried making machine bread with
any of these alternate grains, other than rice. If you have any tips for
me, beyond what's archived in the bread machine files, I'd really
appreciate your advice.
