Scientific studies HAVE identified the prolamins that are toxic to celiacs.
It would seem prudent that foods that have been identified as containing
these toxins (regardless of the amount), be avoided.

Adhering to a strict g/f diet is difficult enough with the risk of hidden
sources of gluten. Allowing a number of foods that are KNOWN to contain
minute quantities of gluten, in addition to hidden sources, only increases
the potential for serious health problems.

Until there is scientific evidence to the contrary, adhering to a STRICT
g/f diet seems to follow the guidelines of current research.
