Buckwheat is what we do every Sturday. As you might know, Buckwheat is not
related to wheat but is a member of the rhubarb family.

The Mix is what we mix ahead and store in Tupperware. The Waffle recipe is
enough for our family with a little left over for the freezer.  You can see
that everything in the Waffle recipe is divisible by 3... divide those
measurements by 3 and you have a "single" recipe. Then multiply it out from
there, depending on how many people you have and how much you might want to
make for the freezer.


BUCKWHEAT PANCAKE & WAFFLE MIX
5 C.   Buckwheat
4 tsp. Salt
1/2 C.   Sugar           
1/4 C.   Baking Powder

BUCKWHEAT WAFFLES
2 1/4 C. B.W. Mix (above)        3  Eggs
1 C. Milk                   1/2 C.   Cooking Oil
2 C. Buttermilk             1/4  tsp  Vanilla

Measure and pour the wet ingredients into a bowl with the mix.  Mix it
together with a wire whisk until it is evenly wet but still lumpy.  Use 1 C.
mix for each batch of 4 waffles.


BUCKWHEAT BUTTERMILK PANCAKES
1 1/2 C. W.W. Mix (above)        2 Eggs
2 C.    Buttermilk            1 Tb.  Cooking Oil

Measure and pour the wet ingredients into a bowl with the mix.  Mix it
together with a wire whisk until it is evenly wet but still lumpy.  Use a
small ladle to measure out pancakes. For crispy pancakes, thin the batter
and use more cooking oil in the pan.
