someone just wrote me asking a question about canola oil.DO NOT USE CANOLA OIL.  it is banned for use in NYC reataurants by the NYC Bd of Health.  It starts off fine but is heated in processing.  THAT TURNS CANOLA OIL INTO A SATURATED FAT!!!! btw..the same thing happens to generic veggie oil which is usually soybean oil....again heat turns it into a saturated fat.

the safe fats?  olive, sunflower and safflower.  Grape seed oil or coconut oil for frying.
