I think it is possible that the reaction experienced by some
individuals to reportedly gf foods (such as Pamela's products) may be
due to the gum ingredients (guar gum, locust bean gum, xanthan gum,
etc.), which in some people can cause constipation, diarrhea,
flatulence, and abdominal distension.

The reaction could also be due to fructose intolerance, which can
cause bloating, abdominal pain, diarrhea, headache, weight loss, and
fatigue.  According to the University of Iowa, "Relief from the
symptoms of Dietary Fructose Intolerance (DFI) are limited to: 1)
avoiding foods containing High Fructose Corn syrup (HFCS), fructose,
most fruits, some vegetables, commercially baked goods, and sorbitol;
and 2) incorporating dextrose into the diet."   The following

fructose intolerant:

And then, of course, there's irritable bowel syndrome (IBS), which
has similar symptoms, but is not thought to be primarily caused by
particular foods.

An individual with celiac disease could have one or more of these
other problems that would cause a reaction to certain foods even
though the foods are gluten free.  In the case of IBS, the individual
could simply be reacting to stress which happens to coincide with the
ingestion of foods that are entirely gluten free.  This would explain
why some celiacs react to Pamela's products and others (even those
who consider themselves extremely sensitive) have no reaction at all.

I have no interest in Pamela's, just speculating about whether there
may be some other cause for a reaction besides gluten contamination.
