Dear ListServe Members,

Happy February!  Happy Valentine’s Day!

GLUTEN-FREE PANTRY is pleased to introduce our own line of spice blends,
brimming with flavor and free of fillers.  Among the new seasoning blends is
the best TACO SEASONING we’ve ever tasted.  It’s become a staple in our
kitchen, as I know it will be in yours.

Here’s a recipe we’ve cooked up using the Taco Seasoning.

TURKEY ENCHILADAS

Enchilada Sauce:
1 medium onion, diced
Olive oil
1 can chopped mild chilies
1, 8-oz can tomato sauce
1, 15-oz can diced tomatoes
2 Tbs. tomato paste
2 Tbs. chopped fresh cilantro
1/4  cup GLUTEN-FREE PANTRY TACO SEASONING (#860)

In a medium skillet, sauté onion in olive oil on low for 5 minutes or until
soft.  Add chilies, tomato sauce, tomatoes, tomato paste, cilantro, and taco
seasoning.  Stir to blend and simmer on low heat for 5 minutes.

10 fresh corn tortillas
1 1/3 lbs. ground turkey
Olive oil
1/2  red bell pepper or more diced
1/4  cup Gluten-Free Pantry Taco Seasoning (#860)
1/4 cup chicken broth or water
1 cup shredded Monterey Jack cheese


Wrap tortillas in foil and warm in a preheated 350 degree oven for 15
minutes.  In a large skillet, sauté turkey in olive oil until meat turns
white.  Add pepper and sauté 2-3 minutes.  Sprinkle taco seasoning over meat
and stir well.  Add chicken broth or water and simmer 5 minutes.

Lightly oil a 9-x-13-inch Pyrex casserole.  Spread a thin layer of enchilada
sauce over the bottom of the casserole.  Set a tortilla in the sauce.  Set
one-quarter cup turkey filling in the center of the tortilla.  Roll and set,
seam-side down in the casserole.  Repeat with remaining tortillas.  Spoon
remaining enchilada sauce over the rolled tortillas.  Top with cheese.
Place under broiler 4-6 minutes or until cheese is melted and enchiladas are
heated through.  Serves 4.
