Does anybody have any good recipes for this?  I'm using a bread-making
machine, and have had some success using white+brown rice flour, and
geletine as a binding agent, with fat-reduced mild instead of water and 3
eggs/2.5kg of bread.

Any more sophisticated recipe would be much appreciates.  Xantan gum is
essentially unavailable in the UK as a cooking ingredient.
