I jsut spoke with Jeff Moskowitz at Classic Cooking, Inc. in Brooklyn and
he told me that they only use flour in the Classics apple kugel and in the
Healthy Delights Zucchini Souflee and the Butternut Squash Souflee. (He
actually mentioned that they are considering making the butternut squash
Souflee without the flour). The rest of the kugels an souflees are made
with potato starch.

He did mention that there is flour that is poured into a vat about 20
feet/yards (I can't remember) away, and that there is slight possibility of
air contamination. However I did ask him about cleaning the lines before
each run, and he confirmed in the affirmative about that.

These kugels are low fat & calorie and their new labels will include our
happy phrase "Gluten free".

I have no interest in this company, except for the fact that it is just
another kosher product that is healthy and pre-made, making meals easier
when life gets hectic.

Enjoy,
Yehudit
