I have always cooked meals at home and I find that much of what I made was
already gluten free or is easily adapted to be gluten free.  Here are two of
the old family favorites that I made tonight.

Instead of Frying Fish

1 - 1 1/2 lb. orange roughy, cod, or similar fish
1/2 cup milk
1 cup crushed GF potato chips
1/4 cup GF grated Parmesan cheese
1/4 tsp. dried thyme
2 Tblsp. butter, melted
1 Tblsp. GF bread crumbs

Cut fish into serving size pieces.  Grease a baking pan and sprinkl with GF
crumbs.  Combine potato chips, Parmesan cheese and thyme.  Dip fish in milk,
then in potato chip mixture. Place in pan.  Bake at 500 degrees for 12 - 14
minutes or until it flakes easily with a fork.


Rice Pilaf

3 Tblsp. GF margarine
3 Tblsp. finely chopped onion
3/4 cup rice
1 1/2 cups GF chicken broth
1/3 cup slivered almonds, toasted

Place almonds on a pan and cook in oven until they begin to turn a light
brown.  Meanwhile, melt margarine in saucepan over medium heat.  Cook onion
until soft, about 5 minutes.  Add rice and chicken broth.  Bring to boil.
Simmer 5 minutes.  Stir in almonds.  Cover and simmer 20 minutes until done.

Both of these recipes have been family favorites for years.  I don't want to
clutter up the list, but I am happy to send along other of my favorites that
  I am still serving to my recently diagnosed celiac husband and two teenage
daughters.  Is anyone interested?
