First, a big thank you for all the responses; over 40!
Thanks too for the tips on how to convert regular recipes and for sending
some recipes.
Here is the summary of what I received:

1. 9 people recommended Incredible Edible Gluten Free Food for Kids by Sheri
Sanderson; said it was a good "first" book to have
2. 9 people recommended  The Gluten Free Kitchen by Robin Ryberg;  said it
had "simple ingredients that are already in your pantry" and that the fried
chicken; onion rings; and cornbread #1 were fantastic
3. 7 people recommended The Gluten-Free Gourmet, revised by Bette Hagman;
said basic yeast bread and muffin recipe was great; also has many tips for
how to convert regular recipes
4. 7 recommended Connie Sarros' Wheat Free, Gluten-Free Cookbook for Kids
5. Wheat-Free, Worry- Free by Danna Korn was recommended
6. Others recommended all the Bette Hagman books although said that some
contain more exotic ingredients
7. Celiac Disease Center at Columbia University has a "Nothing Beats
Gluten-Free Cooking" guide that was recommended; it's available at
Amazon.com
8. Gluten Free 101 by Carol Fenster was recommended several times as well
9. A Celiac Support Group has a cook book available as well:

"has nice plain & easy recipes from our celiac group."

The Cook Book cost $10, with $2 postage.  Checks are to be made payable to:

10. Bread mix from the Gluten-Free Pantry was recommended
