I believe the reason soy products help stabilize Nicolas is that they provide a
form of carbohydrate that is very slowly absorbed.  You will find this effect
with baking/breading flour made from garbanzo beans, also.

You might want to look up "Glycemic Index" on the internet.  It lists food
according to the amount of time it takes for the carbohydrate in them to be
released into the bloodstream.  I have found that avoiding quick carbs
(processed grains, sweeteners) drastically changed and stabilized my own blood
glucose levels.
