I just wanted to thank everyone who responded to my concerns. I was very
uncertain and scared and you all helped me a great deal. The following is a
summary of the information I received.

1. GF foods are denser, therefore, have much higher carbohydrate counts

2. GF foods don't absorb as well as non-gluten-free foods do, so adjust-
ments must be made by more testing.

3. Helpful books by Carol Fenster can be obtained at www.savorypalate.com
for wheat allergies, celiac disease, gluten intolerance and autism.

4. Use a digital scale to weigh all gluten-free foods and measure foods if
you're at home.

5. Many notes of encouragement telling me to keep going and don't give up,
as it gets easier with time.

6. Consuming hidden glutens without realizing can cause highs and lows.
