Yes, because of all the mammals their organs are amongst the closest to
those of humans (aside from apes and monkeys) and they are amongst the
easiest to raise in a lab setting and study.  I did work on a local research
farm at the med school when I was a grad student.  But I worked mostly with
the monkeys, evaluating their social behaviour and correlation with cardiac
health.  The pigs were in another section of the farm.  At Bowman Gray Med
School (part of Wake Forest U), the Anthro grad department and med students
would work on research projects together.  I loved it.
