Bonnie, 

It looks like your mail system is converting your files to what's called
a MIME format.  MIME stands for Multipurpose Internet Mail Extension, or
something really similar (It's been too long since I did tech support.)
Talk to your IT folks and see if there's anyway to stop that.  If you
use Outlook, it may be something as simple as changing from an HTML or
Rich text format in the bar where the send button is to Plain Text, but
ask your IT guys.  Is Sigi Shapiro still around your UCEDD?  If so, tell
her hello for me.
