There is absolutely nothing wrong with dark syrup, it just has a stronger
Maple flavor.  Some folks actually prefer it.  When it gets toward the end
of the season and the buds start to open on the trees it can get rather a
bitter taste to it. That syrup is not especially good for topping pancakes
etc but is fine for cooking.

I think a lot of the lighter is better is just that some folks think
anything lighter and more delicate is better.  Ruth
