Actually the water was pretty good in Yucatan when I was there. It is an underground river system. But I do suspect the civilization may have crashed when the population grew so large the water system could not sustain it during droughts when the sacred wells also may have been polluted by sewage or bodies thrown in for sacrifice to the rain gods. The Book of the Chilam Balams of Chumayel tells of a year of the blood vomit. It also speaks of a hurricane that wiped out most of the tall timber before the conquest. Slash and burn agriculture is also problematic.
